Celebrate National Fajita Day with This Tasty Recipe

Did you know that National Fajita Day is on August 18th? This sizzling dish served hot out of the frying pan is a favorite at Mexican restaurants everywhere, including Mi Jalisco. To celebrate, why not come visit us and enjoy some tasty and spicy fajitas? But if you can’t make it out on that particular day, you can always make fajitas at home.

 

Here’s an easy fajita recipe you can make at home if you can’t make it to Mi Jalisco on National Fajita Day!

 

Easy Fajita Recipe

Ingredients

  • 3 boneless and skinless chicken breasts
  • One medium onion
  • A lime, cut in half
  • 3 bell peppers, any color
  • 3 tablespoons of olive oil, divided
  • 1 teaspoon of chili powder
  • ½ teaspoon each of smoked paprika, onion powder, black pepper, and cumin
  • Salt to taste
  • Corn or flour tortillas

Instructions

In a bowl, combine one tablespoon of the olive oil, the juice of one half of the lime, all the spices, and salt. (If you don’t have all the various spices, you can use 3 teaspoons of pre-made fajita seasoning instead.) Cut the chicken into strips and toss them in the spice mixture. Let it sit for a few minutes while you slice the onion and bell peppers into narrow strips.

Put another tablespoon of olive oil in a pan and heat it over medium-high heat. Add the chicken and cook it until it is just cooked through; that should take about 3 to 5 minutes. Remove the cooked chicken from the pan and set it aside. Depending on the size of your pan, you may have to cook the chicken in two or three batches.

Add the last tablespoon of olive oil to the pan and cook the onions for about 2 minutes or until they are translucent. Then add the bell peppers and cook until they are just hot. Put the chicken back in the pan and stir it all together. Squeeze the juice of the other half of the lime over everything and serve on the tortillas. And that’s it! You’ve made fajitas!
