Thanksgiving is almost here, and that means several days of cooking so everyone can sit down and eat it in half an hour. Then, you have leftovers to deal with. Even if you love Thanksgiving leftovers, you can run out of ways to eat turkey pretty quickly. If you’re looking for new ideas, why not try turning it into Mexican food? Turkey and cranberry sauce aren’t exactly traditional Mexican ingredients, but you can add some tasty Mexican flavors to make Mexican-inspired dishes with your leftovers.

Thanksgiving Quesadilla

Take a step up from the traditional Thanksgiving sandwich and make a Thanksgiving quesadilla! Put some cheese in a tortilla along with chopped leftover turkey and cranberry sauce to make a melty, crispy snack out of your Thanksgiving leftovers. There are countless ways to customize a quesadilla, too. Choose a fancy cheese like brie, or stick with the classic blend of cheddar and Monterey jack. Slice up some jalepeños to make it spicy, so opt for savory Thanksgiving flavors with some fresh sage. Quesadillas are so easy to make; you try all the flavor combinations you can think of!

 

Turkey Tacos

If you want to use up a lot of leftover turkey at once, making turkey tacos is the way to do it. Sautee some bell pepper and onions, and then add shredded turkey, salsa, jalepeños, black beans, or anything else you want in the mix. Instead of using a tortilla or taco shell, crush some corn chips over your turkey taco mix for a crunchy taco bowl. Top with fresh cilantro or guacamole for even more flavors and textures. You can also cook up some rice or make a burrito with a large tortilla. Anything you’d do with a ground beef taco mix, you can do with turkey. And you’ll use up your Thanksgiving leftovers!
