Summer Mexican Food at Home: How to Make Elote

Elote, or Mexican street corn, is a popular Mexican food throughout the year, but it has a special association with the summertime. Elote brings to mind sunshine, food trucks, and outdoor festivities. It’s a common side dish in many Mexican restaurants, but it’s also easy to make at home. Whether you want to wow your friends at the neighborhood barbeque or bring some Mexican flavors to your summer menu, elote is a fantastic dish to flex your culinary muscles.

Easy Elote Recipe

Ingredients

  • 3 cans of corn, drained, or about a dozen ears of corn, shucked
  • 2 tablespoons of butter
  • 3 tablespoons of mayonnaise
  • 1 to 2 tablespoons of lime juice
  • 2 teaspoons of chili powder, divided
  • Kosher salt
  • Cotija cheese (romano or feta will also work if you can’t find cotija)
  • Cilantro, roughly chopped

 

Instructions

There are two ways to cook the corn, depending on whether you are using canned corn or corn on the cob. If you are using canned corn, heat a cast iron skillet over high heat and cook the corn for about 10 minutes, stirring occasionally. If you prefer to use corn on the cob, grill it either on a grill or a stove. Don’t be afraid of charring the corn, as that will bring out the flavor. After grilling the corn, you can either leave it on the cob or remove it.

Once you have cooked the corn using your preferred method, remove it from the heat and stir in or spread it with butter and add salt to taste. If you are using corn off the cob, mix in the mayo and lime juice, followed by the chili powder. For corn on the cob, mix the mayo, lime juice, and chili powder in a bowl and drizzle over the corn. Sprinkle with cheese and cilantro, and enjoy!
